Ok team, by popular request the mandarin almond cake recipe. Enjoy!
Cake ingredients
350g mandarins
200 g almond meal
1 cup caster sugar
2 teaspoon vanilla
1 teaspoon baking powder
5 free range eggs
Topping syrup
¼ cup sugar
1 mandarin juice
1 lime juice
What to do
1. Put whole unpeeled mandarins in a pot and cover with cold water. Bring to boil for about 1 hour then drain and allow to cool.
2. Preheat oven to 180°C. Using springform cake tin cover the bottom circle with baking paper before clicking in.
3. Remove the stem of the mandarins, then cut in half and remove any seeds. Place fruit (skin included) in a food processor or blender and whizz until smooth. Add all other cake ingredients and whizz until combined.
4. Pour into prepared cake tin and bake for 1 hour or until a skewer inserted in the middle of the cake comes out clean.
5. Remove from oven and while still in the tin, mix up syrup ingredients and pour over. Allow cake to cool slightly but not fully before removing from tin.
Top with greek yoghurt and eat!
I love this recipe. It’s delicious, nutritious, high in protein and uses mandarins, limes and eggs from the backyard. It allows me to spend a few minutes doing a step in the recipe, then an hour doing other things, then come back for another tiny step and another big break.
Excellent to have on the stove/in the oven while working from home, or preparing dinner or doing chores, or potting seedlings or whatever else you like to fill your time with!
